Find your inner artisan at a Curing & Smoking Masterclass with Steven Lamb. With a concentration on provenance, traditional artisan skills and understanding the ancient process of dry curing, and hot and cold smoking this demo will be a perfect springboard to making some classic products such as pancetta, chorizo, hot smoked fish and cold smoked cheese.
This is a demonstration lead session but there will be some opportunity for hands-on participation.
In this class, Steven will give you the confidence and know-how to create flavoursome seasonal classics with plenty to taste along the way.
