About the masterclass
Join cook, writer, Wahaca founder and Masterchef winner Thomasina Miers for an exceptional day of Mexican food in The Walled Garden of Hawarden Castle.
You will come away with genuine skills and an appreciation for new seasonings and approaches.
You will learn:
How to recognise and use different Mexican chillies
How to rehydrate dried Mexican chillies
About the spices and herbs used in Mexican cookery
How to grill tomatoes, chillies etc. to make salsa
How to cook beans beautifully
How to use citrus and vinegar to season
The menu
Asparagus and charred tomato romesco
Black beans with avocado leaf
Warm purple sprouting with charred chilli & mint dressing
Spatch-cocked chicken with ancho adobo
Roast sweet potatoes with mojo de ajo & fresh tomato salsa
Heritage wheat tortillas
About the day:
10am: Welcome introduction, tea + snack. Talk about the recipes, the tasks etc.
10:30am - 1:30pm - Workshop Part 1.
In small groups Tommi will guide you through three essential tasks:
Task 1: Cooking Romesco; chicken adobo & mojo de ajo; black beans & tortillas
Task 2: Cooking refried beans & fresh tomato salsa; veg prep (sweet potato, asparagus, broccoli) & charred chilli dressing; doughnuts & hibiscus sugar
Task 3: As a full group you will then cook the chicken; grill the veg; make the tortillas
2pm – 3pm: Eat what you have created!
3pm – 3.30pm: Short break & coffee
3:30pm – 4.15pm: Workshop Part 2.
Make chocolate sauce.
Talk about vanilla, sugar, citrus.

Just yourself, a water bottle and some suitable clothing for the weather. We have lots of areas under cover, should the sun not shine. All equipment and ingredients are provided.

The car park is a short walk (one or two minutes) from The Walled Garden. Parking is free.
